Nourishing and ready in a blink
These Zucchinis fritters are perfect for any meal of the day. If you prep[are too may of them, you can freeze them. I love serving them with a large green salad and a tomato, cucumber, parsley salad or/and dips.
Serves: 2.
Yield: 8 fritters
Preparation time: 15 minutes
Cook time: 5 minutes
Ingredients
- 2 medium zucchinis (grated)
- 1/2 yellow onion (finely diced)
- 1 Tbsp almond meal
- 2 Tbsp flaxseed meal mixed with 3 or 4 Tbsp water. Let sit for few minutes to have a gel consistency.
- black pepper and sea salt
- 1 drop Black Pepper and Thyme Young Living culinary Essential oils
- 1 Tbsp extra-virgin olive oil, plus additional to taste
- 2 cups baby spinach leaves, parsley, basil
- 1/2 lemon
Method
- Add a pinch of salt to the zucchini and allow to sit for 10 minutes to draw out extra water.
- Using your hands, squeeze the zucchini to remove excess water, discarding the liquid.
- Add the onion, almond meal, eggs or flaxseed meal gel, some olive oil, Black Pepper and Thyme essential oils, a pinch of salt and pepper. Mix well to have a thick batter.
- Heat 1 tablespoon oil in a frying pan over medium heat. Pour the fritter mixture into the frying pan in 8 even scoops. Cook for 5 minutes on each side, or until golden.
- Serve with some green or mixed salad, a squeeze of lemon, sprinkle some basil or parsley, add a drizzle of oil, and if you wish a Tbsp of Coconut yogurt and Kimchi. As you know, fermented foods are great for our guts.
