Light, Gluten Free and Vegan, a New Favourite
Vegan Banana Bread
Ingredients
- 2 cups ripe mashed bananas (I used Lady Fingers)
- 1/3 cup melted coconut oil
- 1/2 cup coconut sugar
- 3 tbsp almond or oat milk
- 3 drops Young Living Orange essential oil
- 1/2 cup besan flour (chickpea flour)
- 1/2 cup buckwheat flour or almond meal
- 1/2 cup arrowroot flour
- 1,5 tsp baking powder
- 1/3 tsp salt
- Your choice of candied orange peel, cinnamon power, cacao nibs, dried blueberries or currants
Recipe
1/ Line a baking pan with parchment baking paper.
2/Preheat the oven 350 degrees
3/In a bowl mix together the mashed bananas, melted coconut oil, sugar, almond milk and orange essential oil. Add the other ingredients with your choice of ‘extras’ and mix well.
4/Place batter in baking ban and bake 20 minutes at 350 degrees then 20 to 25 minutes at 300 degrees. Check regularly by inserting a sharp knife in the middle of your cake. Allow your Vegan Banana Bread to cool down a few minutes while still in the pan before transferring it to a wire a rack.
A Word of Caution, not all essential oils are equals!
Make sure that the oils you use and wish to ingest are organic, therapeutic grade and listed as dietary supplements. Be as creative as you want and don’t forget that 1 drop goes far. In a cup of tea or a glass of water dipping a toothpick in the essential oil bottle and swirling it in your water is often enough.
