I am quite excited by this new Raw Slice, that my Reiki students enjoyed last weekend. Another beautiful high energy and healthy treat well deserved after a day studying Reiki.
Base
1 cup activated raw almond, 1 cup raw cashews either 10 medjool dates, seeds removed or some yacon (best option if you don’t want sugar), 2 tablespoons cacao. Line a cake tin with baking paper. Place the ingredients into your food processor and blend at high speed until the mixture is completely broken down and is like a fine sticky crumb.
Press the mixture firmly into the cake tin and place in the fridge.
Centre
1 cup desiccated coconut, 1 cup raw cashew, 2 Tbsp lemon or lime juice, 2 tablespoons of coconut oil, 2 drops of Young Living Lemon Essential oil*.
Place the ingredients into your food processor and blend at high speed until smooth. Spread and gently press the mixture over your base.
Cacao cover
½ cup melted but not hot coconut oil or cacao butter, ½ cup raw cacao, 1/3 cup (or a bit less) coconut nectar or Yacon syrup.
Place the ingredients into a bowl and mix until smooth and well combined. Pour the chocolate over your slice and use the back of a spoon to spread it to the edges. Decorate with Goji berries and place in the fridge for several hours to set.
