Sunflower and Hemp Seeds Timbale or Dip (Raw Vegan)
This is a delicious preparation that is very nourishing and can be also used as a dip (add a bit more coconut water). Sunflower seeds* are packed with key nutrients, essential fatty acids, fibber, amino acids, which make up the building blocks of proteins, Magnesium, B and so much more. Hemp seeds are also a great source of vitamin E and minerals such as phosphorus, potassium, sodium, magnesium, sulfur, calcium, iron and zinc. 
They are, with Quinoa, one of the rare plant to be considered as a complete protein (2 tbsp =11 gr proteins).
The dressing, a vegan mayonnaise, can be served apart and accompany many other dishes. You can also add different spices to it from turmeric, herbs, paprika…The only limit is your imagination!
Ingredients
- 2 cups soaked sunflower seeds
- ½ cup hemp seeds
- 2 tbsp Dulse flakes
- 2 drops Basil Essential Oil and/or Lemon**
Mayonnaise
- 1 cup coconut water
- 2 cloves garlic
- ½ cup fresh lemon juice
- 1tsp sea salt
- Pepper
- 2 cups macadamias or cashew nuts
- 1 tbsp organic mustard
Method
In a high -speed blender add all the mayonnaise ingredients and blend until it is smooth. Put some aside. Add all the remaining ingredients and blend until you have the texture you wish. I personally love keeping a bit of crunchiness.
If you wish to shape as a timbale use a ramekin, put some hemp or sesame seeds in the bottom to prevent the timbale to stick and press the mix in. When ready to serve turn out on a plate, add salad, fresh herbs…and savour.
