A great way to eat your greens!
An easy and very tasty recipe that will please everyone. I have been using different herbs and greens in the garden as well as pine nuts , olives and capers. It works perfectly well with macadamias nuts or walnuts.
The pesto will accompany well pasta, great as a dip or on toasted bread.
The only limit is your imagination!
Ingredients
- 1/2 cup extra virgin olive oil
- 2 cloves garlic
- Tbsp lemon juice
- 1/2 cup raw pine nuts or macadamias nuts
- 2 Tbsp olives without pitted
- 2 Tbsp caper berries
- 1 cup basil
- 1/2 cup Italian parsley
- 1 cup baby spinach, arugula, mustard leave …
- 3 Tbsp nutritional yeast
- 1 tsp salt and pepper (to taste)
- 1 drop Young Living essential oil Black Pepper
- 1 drop Young Living essential oil Basil
- 1 chili (optional)
Method
Put all the ingredients into your blender or food processor
Blend until desired consistency is reached.
Be sure that you add some extra olive oil on the top of the jar.
I usually make several jars and keep some in the freezer.
