A Colourful, Healthy and Tasty Dip

Beetroots are a powerhouse of nutrients. When used raw we can absorb even more of all their benefits. They are rich in minerals, vitamins, fibres and antioxidants. They are also a good source of folate, vitamin C, betaine, manganese, potassium,  iron, calcium, copper and vitamin B6.

You can add their leaves to your salads, make the most colourful and stamina boosting juice, grate them to create colourful salads and make in 10 minutes this dip that everyone will enjoy.

 

Ingredients

  • 1 cup raw beetroot peeled (preferably organic)
  • 2 or 3 garlic cloves
  • Bunch parsley
  • Handful of dandelion leaves or rocket
  • 1/2 lemon juice
  • 1/4 cup sunflower seeds
  • 1/4 cup organic olive oil
  • 2 Tbsp unhulled tahini
  • 1 Tbsp apple cider vinegar
  • 1 drop Nutmeg or Thyme essential oil
  • 1 drop Lemon and Black Pepper essential oil
  • 1 Tsp wholegrain mustard
  • salt and pepper

Method

  1. Put all the ingredients into your blender until smooth
  2. Choose some nice glass jars and keep in the fridge until it’s time to enjoy it!
