Delicious and nutritious mushrooms

Fresh mushrooms provide many nutritional benefits that are a great addition to all diets especially vegan and vegetarian.  They contain protein, vitamins, minerals, and antioxidants including selenium, vitamin C, choline*.

Mushrooms also contain a number of B vitamins, thiamine, riboflavin, B-6, and B-12. B vitamins help the body get energy from food and form red blood cells. They are also important for a healthy nervous system and brain.

Mushrooms are also the only vegan, non fortified dietary source of vitamin D.

*What’s choline? Choline assists in maintaining the structure of cellular membranes and plays a role in the transmission of nerve impulses.

When buying fresh mushrooms, always chose ones that are firm, dry, and unbruised. Avoid mushrooms those that appear slimy or withered. Store them in a paper bag in the refrigerator and wash them only when you are ready to prepare them.

There are many ways to eat mushrooms. button mushrooms can be added raw to salads. All mushrooms can be cooked in olive oil with garlic and spices of your choice. They can be grilled, stuffed, added to stir fried….

Raw Marinated Button Mushrooms inspired by a French recipe from my childhood

Ingredients for 2  mason 450ml jars

  • 36 to 40  organic button mushrooms
  • 1 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic, minced
  • 2 tsp coconut syrup
  • 2 tsp mustard
  • 1 tsp dried Kelp flakes
  • Salt and ground pepper
  • 2 drops Young Living Lemon, Thyme and Rosemary essential oils

Directions

Wash quickly your mushrooms in cold water with a drop of vinegar. Cut slightly the base if necessary. Put them on a paper towel.

Prepare your salsa. Put first mustard, salt and pepper, garlic, kelp, essential oils, add vinegar and mix well.

Incorporate slowly olive oil. Place your mushrooms the jars and cover them with the salsa. Mix well and keep turning every couple of hours until they are all covered with the salsa.

Close the jars. They will keep well for few weeks if you resist to eat them all!
