Water Kefir with Ginger and Ningxia red
A delicious source of probiotics for all
Ingredients
• 8 tbsp water kefir grains
• 6 tbsp organic sugar (2 can be Rapadura or coconut sugar)
• 6 cups mineral or spring water)
• 1 pinch of bicarbonate soda
• 3 dry fruits (figs or apricots are great)
• 2 Slices of organic lemon • 50 ml Ningxia red*
1. In a glass jar add 1cup hot water and dissolve the sugar and bicarbonate soda
2. Add remaining cold water + kefir grains (use plastic spoon) + dry fruits and slices of lemon
3. Cover with cloth and seal with rubberband.
4. Leave to ferment cupboard for 48 hours. The longer you leave it, the more sugar ferments are out and the more sour will be the kefir.
6. Drain off the water Kefir grains through a mesh strainer (no metal)
7. Strain and pour in a glass bottle
8. Add 50ml of Ningxia red* for colour and extra power (orange juice is good too) and 1 drop Ginger or Cinnamon Young Living Essential Oil**.
9. Leave on the counter for 1 to 3 days until it is fizzy enough. Caution: Release pressure regularly. When ready refrigerate and enjoy.
What is Water Kefir?
Water kefir is a fermented drink made from kefir grains with beneficial bacteria. It also contains a variety of enzymes and organic acids, and B vitamins, vitamin K and folic acid. The grains make up a culture of various strains of healthy bacteria and yeast, held together in a polysaccharide matrix created by the bacteria. The symbiotic relationship of the microbes produces a stable growing culture. The microbes feed on sugar and produce lactic acid, alcohol and carbon dioxide, yielding a fermented carbonated beverage. The alcohol content is usually very minimal, less than 1 %.
What are Water Kefir’s health benefits?
Kefir means “feel good” in Turkish. Water Kefir is a natural source of probiotics. Overgrowth of the wrong type of bacteria can lead to many illnesses (IBS, fungi, yeast infections, obesity, indigestion, Crohns Disease, skin disorders etc…) Water kefir helps bringing back balance to your internal microflora.
Dr. Gabriel Cousens wrote in his book Rainbow Green Live Food Cuisine that Kefir grains produce right-rotating L (+) lactic acid, which is an important constituent of the human body. It is particularly important in the prevention of cancer and has been used experimentally with success to treat cancer. In addition, right-rotating lactic acid may help maintaining healthy functioning of the heart. According to some researchers, the cells of the heart muscle obtain their energy primarily from right-rotating lactic acid.
How to store your Kefir grains?
When you are not fermenting, store the grains in a glass jar filled with fresh water and a couple of spoons of sugar. Replace water and add sugar every 3 weeks. Before using the grains rinse them.
