A Delicious Autumn Treat, Gluten Free Vegan Option
As the weather starts freshening the smell of a cake in the oven is always comforting. This Lemon Almond & Poppy Seeds Cake is light, tasty and easy to make. The addition of poppy seeds makes it very special. Poppy seeds are used in many kitchens around the globe. They are very versatile and complete well savoury and sweet dishes.
Poppy seeds are small, round seeds derived from the opium poppy plant, Papaver somniferum. Do you know that they come in various colours, including blue, black, and white? These minuscule seeds pack a punch when it comes to flavour, texture and nutrition. Do you know that Greeks and Romans documented their use of Poppy seeds?
Today, poppy seeds are a well-established commercial crop in many parts of the world including the Czech Republic, Germany, Turkey, France, India, and the East European region.
Some of the nutritional benefits are providing Calcium, Manganese, Zinc, Iron, Copper, Linoleic acid, proteins, Magnesium…The seeds are especially rich in oleic and linoleic acids. Oleic acid, a mono-unsaturated fatty acid, helps lower LDL or “bad cholesterol” and increase HDL or “good cholesterol” levels in the blood.
Poppy seeds are known to support healthy bones and skin, and relieve achy joints, constipation, sleeping problems, PMS, and even asthma and certain type of cancer (Dr Axe). They contain very small levels of opium alkaloids that produces a minimal effect on the human nervous system. They are found to have some beneficial effects on the human body; soothe nervous irritability, and act as painkillers.
Ayurvedic medicine uses poppy seeds to help relaxation, soothing tense muscles, nourishing skin, protecting bones and reducing burning and constipation.
Add poppy seeds to your food! I grind them with other seeds (sesame, sunflowers, pepitas, chia seeds & flaxseeds) and add them to my breakfast.
Lemon Almond & Poppy Seeds Cake Recipe
Ingredients
- 2 cups almond meal
- 1/4 cup organic olive oil
- 1/4 cup Maple syrup
- 2 eggs or vegan substitute (chia seeds soaked in water for example or check my favourite eggs substitute)
- 1/4 cup lemon juice
- 8 drops Young Living Lemon Essential oil*
- 1/2 teaspoon baking powder
- 1 Tbsp Poppy Seeds
- Add if you wish a handful of wild blueberries
Instructions
- Preheat your oven to 350℉. Line baking tray with baking paper
- In a large bowl, whisk together all the ingredients
- Pour the batter into the baking pan and sprinkle with Poppy Seeds
- Bake for 30/35 minutes (keep middle slightly moist)
- Allow to cool down on a grill and enjoy
