Easy to Make, Healthy, Vegan and Gluten Free

This creamy, rich in flavours delicious roasted eggplant dip, also called Baba Ganoush, originates from middle-eastern countries. It is served with pita bread, olives and pickled veggies at the beginning of a meal.

Ingredients

2 eggplants medium size

3 tbs hulled tahini

2 or 3 garlic cloves peeled and minced

2 tbsp organic olive oil

1 tbsp lemon juice

Salt, 1 pinch cumin and cayenne pepper (optional)

1 drop Thyme, Black Pepper Young Living Culinary essential oils

2 drops Lemon Young Living Culinary essential oils

Parsley and a sprinkle of olive oil to decorate

Directions

  • Wash the eggplants, with a sharp knife cut few small notches in the skin and place them whole in the pre-heated oven until it is cooked.
  • Scoop the flesh out and place it in your blender with all the ingredients
  • Serve in a nice bowl with some parsley and olive oil on the top
