I love experimenting with my raw treats and this one is on the path to become a favourite! The mix of pistachio and chocolate is just somptuous. There are many health benefits of pistachios. They are one of the few nuts that contain most of the nutrients that are required by humans for complete health. Pistachios contain a higher amount of protein than other nuts as well as calcium, iron, magnesium, phosphorous, potassium, zinc, copper, manganese, and selenium. Research suggests that regular pistachio consumption can decrease the levels of bad LDL cholesterol in the body and help in reducing the risk of contracting age-related macular disease.
Base
1 cup activated raw almonds, 1/2 cup raw macadamias, 8 medjool dates seeds removed, 2 tablespoons hemp seeds, 3 tablespoons raw cacao powder, a pinch of sea salt, 2 tablespoons coconut oil. Line a cake tin with baking paper. Place the ingredients into your food processor and blend at high speed until the mixture is completely broken down and is like a fine sticky crumb.
Press the mixture firmly into the cake tin and place in the fridge or freezer for 1 hour.
Centre
1 cup desiccated coconut, 3/4 cup raw pistachios, 1/4 cup brazil nuts, 1 tablespoon Maca powder, 1/3 cup cranberries, 1/3 dried bluberries, 2 tablespoons of coconut oil, 1/4 cup coconut butter (natural) and 2 drops of Young Living Cinnamon bark Essential oil*.
Place the ingredients into your food processor and blend at high speed until smooth. Spread and gently press the mixture over your base. Place in fridge or freezer for 1 hour.
Cacao cover
1/3 cup melted but not hot coconut oil, 1/3 melted cacao butter, 2/3 cup raw cacao, 1/3 cup (or a bit more or less following your taste) coconut nectar or Yacon syrup.
Place the ingredients into a bowl and mix until smooth and well combined. Pour the chocolate over your slice and use the back of a spoon to spread it to the edges. Decorate with shredded coconut or pieces of shredded pistachios and place in the fridge for several hours to set.
